- 2 eggs
- 3 Tbsps milk (optional)
- ½ cup spinach
- 1 roma tomato (diced)
- ½ cup shredded cheddar cheese
- 2 Tbsps extra virgin olive oil
- salt and pepper (for seasoning to taste)
Crack your eggs and place in mixing bowl.
Season with salt and pepper to taste.
Optional: Add milk.
Using your whisk or fork, beat the eggs. Set aside.
Heat pan on stove over low to medium heat.
Add 1 Tbsp olive oil. Ensure the bottom of the pan is well coated with oil.
Add tomato and sauté for 1 minute.
Add spinach and sauté for 30 seconds.
Remove spinach and tomatoes from the pan by placing them onto a plate. Set aside.
Add 1 Tbsp olive oil. Again, ensure the bottom of the pan is well coated with oil.
Pour eggs on the pan.
Tilt the pan to distribute the eggs evenly.
Once the eggs starts to set, add the spinach and tomatoes back to the pan. Let cook for a minute.
Sprinkle with cheese.
Optional: If using a lid, cover the skillet. Continue to cook until the eggs are done (about 1 to 2 minutes).
Otherwise, carefully fold the omelette in half. Let cook for a minute.
Transfer to a serving platter.
