- 450g of any pasta you like
- 1/2 cup olive oil + more for finishing
- 500 g cherry tomatoes
- 225 g feta cheese block or crumbled
- 2 cloves of garlic minced
- 1 handful of fresh basil leaves
- Salt & pepper to taste
- Chilli flakes to taste optional
Preheat your oven to 400°F (200°C).
In a baking dish, season the cherry tomatoes, salt and olive oil.
Nestle the block of feta in the center.
Place the dish in the oven and bake for about 30 minutes, or until the tomatoes are blistered and the feta is golden and creamy.
While the feta and tomatoes are baking, cook your pasta according to the package instructions. Reserve a cup of pasta water before draining.
Once the tomatoes and cheese have baked, add garlic, basil, pepper and chilli flakes.
Stir to combine.
Toss in your cooked pasta. Add reserved pasta water as needed to achieve a creamy consistency.
