Ingredients

  • ⁣450g of any pasta you like
  • 1/2 cup olive oil + more for finishing
  • 500 g cherry tomatoes
  • 225 g feta cheese block or crumbled
  • 2 cloves of garlic minced
  • 1 handful of fresh basil leaves
  • Salt & pepper to taste
  • Chilli flakes to taste optional

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a baking dish, season the cherry tomatoes, salt and olive oil.
  • Nestle the block of feta in the center.
  • Place the dish in the oven and bake for about 30 minutes, or until the tomatoes are blistered and the feta is golden and creamy.
  • While the feta and tomatoes are baking, cook your pasta according to the package instructions. Reserve a cup of pasta water before draining.
  • Once the tomatoes and cheese have baked, add garlic, basil, pepper and chilli flakes.
  • Stir to combine.
  • Toss in your cooked pasta. Add reserved pasta water as needed to achieve a creamy consistency.
  • Serve and enjoy!

Notes

  • If you don't have cherry tomatoes, grape tomatoes can easily step in as a substitute.
